Veggie Frittata
Preparation:
4 egg whites and 1 whole egg. Cut up any veggies you would like such as mushrooms, onions, tomatoes, green peppers, and sauté in extra virgin olive oil. Add egg and let mixture set. Then place in an over at 300°F for 10-15 minutes. You can top with salsa for extra flavor.
