Salmon Quinoa Patties

 

1 to 1.5 lbs. of uncooked salmon

3 to 4 chopped green onions

Handful of cilantro

1 teaspoon lemon zest (optional)

1 cup cooked quinoa

salt and pepper to taste

 

Place green onions, cilantro, lemon zest, salt and pepper into a food processor and pulse for a few seconds. Add salmon and quinoa to food processor and pulse until salmon is chopped and mixture comes together.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Scoop about 1/4 cup of mixture and form into a 1/2-inch patty. Continue making patties with the rest of the mixture.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Heat 1 tablespoon olive oil in a 10-inch skillet over medium-high heat. Add 3 of the patties to the skillet and cook for about 3 minutes on each side.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Remove from skillet, place on paper towel and cook remaining patties. You may have to add a little more olive oil to cook the remaining patties.
