Skillet Lasagna

 

This is a really simple one-pot meal, great for the whole family!

 

What you need:

1/2 to 1 pound lean ground beef or ground turkey

26 oz jar of spaghetti sauce

3 cups water

8 oz. whole wheat egg noodles, uncooked

1 cup low fat cottage cheese

1/4 cup grated Parmesan

1/2 cup shredded mozzarella

 

How to make it:

  1. Brown ground beef in a large skillet. Drain.

  2. Add spaghetti sauce and 3 cups of water. (RInse out the jar using some of the water.) Bring to a boil.

  3. Add egg noodles, return to a boil. Reduce heat and cover, simmer for 10 minutes.

  4. Gently stir in cottage cheese, parmesan and mozzarella. Cover and let simmer for 5 more minutes.
