Protein Pancakes
What you need:
6 oz fat free Greek Yogurt*
2 egg whites
1/2 cup whole wheat flour
1 tsp baking soda
How to make it:
In a mixing bowl, mix the whole wheat flour and baking soda. Add the yogurt and egg whites and stir until a thick batter is formed. Coat a pan lightly with nonstick cooking spray and place over medium heat. Pour the batter into 3 inch circles. Flip the pancakes once they start to bubble. Cook until both sides are golden brown.
This is really just a base recipe and you can add things to it to make it your own, create different flavors! Sometimes I will add pumpkin pureé and cinnamon, or some blueberries.
*I usually use Plain Greek yogurt because the flavored yogurts can be kind of high in sugar. Occasionally I will use a flavored yogurt, like the other day I tried the seasonal Apple Cinnamon Chobani Greek Yogurt.
